This Fresh Corn Salsa is sweet, tangy, a little spicy, and packed with fresh flavor. Made with sweet corn, red onion, jalapeño, cilantro, and plenty of fresh lime juice, it’s an easy salsa that comes together in minutes and instantly adds a pop of flavor to just about any meal.

I originally made this corn salsa to go with my Steak Rice Bowls, and honestly, I could eat it straight out of the bowl with a spoon. The sweetness of the corn paired with the fresh lime and little kick from the jalapeño is such a good combination, especially alongside smoky grilled or seared meats.

If you love the fresh corn salsa served at your favorite burrito spots, this recipe has that same bright, refreshing feel, but it’s not meant to be a copycat. This is my easy homemade version that you can adjust to your taste and serve with everything from tacos and rice bowls to grilled chicken, steak, seafood, or simply a big bowl of tortilla chips.

Corn

Sweet corn is obviously the star here! Depending on the season and what you have available, you can use fresh, frozen, or canned corn.

For even more flavor, you can grill or char the corn before making the salsa.

Red Onion

Finely diced red onion adds crunch and a slightly sharp flavor that balances the sweetness of the corn.

Jalapeño

Jalapeño adds just enough heat without making the salsa overwhelmingly spicy. Remove the seeds and membranes for a milder salsa, or leave some in if you like a little kick.

Poblano Pepper

Poblano peppers add a mild, earthy flavor and a little smokiness without making the salsa overly spicy. I love charring the poblano before chopping it to bring out even more flavor.

Fresh Cilantro

How to Make Fresh Corn Salsa

Step 1: Prepare the Corn

If using fresh corn, remove the kernels from the cob after cooking. If you’re using frozen corn, cook according to the package directions and allow it to cool.

For canned corn, drain it well before using.

Step 2: Prep the Vegetables

Finely dice the red onion and jalapeño and chop the fresh cilantro.

Keeping everything relatively small makes it easier to get a little bit of every ingredient in each bite.

Step 3: Mix Everything Together

Add the corn, red onion, jalapeño, queso fresco, and cilantro to a large bowl.

Pour fresh lime juice over everything, season with salt and Tajín, and toss until evenly combined.

Step 4: Let It Rest

You can serve the salsa immediately, but I like letting it sit for about 10–15 minutes first. This gives the lime and salt a chance to mingle with all of the other ingredients.

Taste before serving and add more lime juice, salt, or jalapeño if needed.

Let the Corn Cool

If you’re cooking your corn first, let it cool before mixing it with the cilantro and other fresh ingredients. This helps everything stay crisp and fresh.

Use Fresh Lime Juice

Freshly squeezed lime juice makes a noticeable difference here. Since there are so few ingredients, each one really matters.

Dice Everything Finely

Finely chopping the onion and jalapeño distributes their flavors throughout the salsa instead of giving you huge pieces in individual bites.

Adjust the Heat to Your Taste

For a mild corn salsa, remove the seeds and membranes from your jalapeño. For more heat, leave some in or add another jalapeño.

Give It Time

Even 10 minutes of resting makes a difference. It allows the salt and lime juice to draw out some of the natural juices and creates even more flavor.

All three work!

Fresh corn is fantastic when corn is in season and gives you that crisp, naturally sweet flavor.

Frozen corn is my favorite shortcut because you can keep it on hand and make corn salsa whenever the craving hits.

Canned corn works when that’s what you have in your pantry. Just drain it thoroughly before adding it to the salsa.

And if you want to take things up a notch, try charring your corn in a hot skillet or on the grill. You’ll get little caramelized spots that add a delicious smoky flavor.

Corn Salsa Variations

Charred Corn Salsa

Cook the corn in a hot cast-iron skillet until you get some browned, slightly charred pieces before letting it cool and assembling the salsa.

Spicy Corn Salsa

Add another jalapeño or swap it for a serrano pepper.

Corn and Avocado Salsa

Fold diced avocado into the salsa right before serving for a creamy contrast to the crunchy corn.

Corn and Black Bean Salsa

Add drained black beans to turn this into an even heartier salsa or side dish.

Ingredients

  • 24 ounces of frozen corn
  • 1 poblano pepper
  • 1/2 red onion, chopped
  • 2 jalapeno peppers, chopped (seeds removed)
  • chopped fresh cilantro, one bunch
  • 2 tablespoons lime juice
  • 1/2 cup queso fresco
  • salt to taste
  • Tajin to taste.

Instructions

  • Turn a gas burner to HIGH. Using tongs, roast the peppers directly over the flame, turning occasionally, until charred and blistered on all sides, about 2 to 3 minutes.
  • Transfer to a bowl, cover tightly, and let steam for 5 minutes. Peel the charred skins. Remove the seeds and stems and chop the peppers.
  • Cook the corn according to package directions. Allow to cool.
  • In a large bowl, combine the cooled corn, red onion, jalapeno peppers, poblano pepper, cilantro, queso fresco, and lime juice. Season to taste with salt and Tajin.

  • Fresh, frozen, or canned corn all work. If using frozen corn, cook and cool it completely before assembling the salsa. If using canned corn, drain it well.
