Have I got a fun party idea for you! Every year I try to throw a summer dinner party for all my friends so that we can get together and celebrate life and each other. It usually ends up being some sort of backyard barbecue, but this year I wanted it to be different. So I teamed up with Malibu Rum to design a party that would be fun, colorful, and delicious!

Inspired by a trip to Morocco; I wanted to bring that same look and energy to my dinner party. While I didn’t want this to be a Moroccan themed dinner party; I did want to bring in elements like the floor seating with colorful pillows, lights, flowers, and of course Moroccan dishes. I had my friend build a long wooden table for us that I decorated with a white table cloth. From there the color came in with lots of eclectic dishes/serve ware and of course sunflowers.

The Malibu Coconut Rum was the perfect drink to help celebrate the night. The delicious coconut flavored rum screams summer; so I decided to mix it with some fresh pineapple juice and freshly squeezed limes. They’ve also got a new flavor, Malibu Lime which has a bold and juicy taste with a fresh lime finish that is perfect in any mixer! I like to keep the cocktail recipes simple during a dinner party so all you need to do is mix the Malibu with a little bit of juice for the perfect coconut rum and pineapple cocktail.

For the dishes, I served up some pita with hummus as the appetizers. The entree was a chickpea soup that I made with some fresh tomatoes and spinach. I used a lot of North African spices like cardamom, turmeric, cumin, and cinnamon. That was served up with some couscous and sauteed chicken breasts. Feel free to incorporate whatever dishes you feel like when it comes to this party. I also had some olives, artichokes, and sun dried tomatoes to nibble on throughout the night. Classic ingredients for a Moroccan dinner party.
