Sometimes whenever I’m feeling crazy stressed or it’s just been a long day; cooking helps me to relieve some of that tension and relax. Of course I’m not cooking anything elaborate; that would be way to taxing. That’s why I love to whip up this beef fried rice. With juicy pieces of beef, scrambled eggs, and seasoned veggies this dish is quick to make and totally delicious. What makes it even better is that I love to enjoy it with a glass of wine. I’ll open up a bottle just before I start cooking, and enjoy a glass of wine through the whole process. Who am I kidding? I’m halfway through the bottle by the time the fried rice is done.

I paired a red wine to go with these beef fried rice and it was perfect. Cooking this fried rice is super easy. I used a packet of frozen stir fry veggies for my veggies, onions, garlic, and some sirloin that I cut into strips. If you have day old white rice this is perfect. Literally makes cooking this fried rice amazingly easy.

How I Unwind With a Glass of Wine & a Quick Beef Fried Rice

Yield: 3-4

After a long busy day, I love to whip up this delicious quick beef fried rice and pour myself a glass of wine. The perfect way to unwind after a crazy hectic day.

Ingredients

  • 2 tbsp soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp white wine vinegar
  • 1 tsp brown sugar
  • 1 tbsp vegetable oil
  • 3eggs, well beaten
  • 1/2 lb. beef, sliced
  • 1 packet of frozen stir fry vegetables
  • 1 tsp. fresh ginger, minced
  • 1 clove garlic, minced
  • 2 cups cooked rice, day old

Instructions

  1. Combine the soy sauce, sesame oil, white wine vinegar, sugar and salt and pepper to taste in a small bowl and set aside.
  2. Heat the oil in a heavy nonstick skillet or wok over medium high heat.
  3. Cook the eggs until they are scrambled, about 1 minute.
  4. Transfer eggs to a bowl and set aside.
  5. Add another tablespoon of vegetable oil to the skillet and add the beef. Season with salt and pepper and saute for 3 minutes, until brown.
  6. Add the frozen vegetable and sauté about 3 minutes, stirring often .
  7. Stir in the ginger and garlic and cook for 1 minute.
  8. Turn the heat to high, and add the rice.
  9. Stir-fry about 1-2 minutes, until heated through.
  10. Add soy sauce mixture and eggs and stir-fry for another 30 seconds.
  11. Garnish with green onions and sesame seeds if desired.
