How to Make Creamy Tuscan Salmon

Step 1: Sear the Salmon

Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium heat. Sear the salmon, skin-side down first (if using), for 3–4 minutes per side until golden and cooked through. Remove and set aside.

Step 2: Make the Sauce

In the same skillet, add garlic and cook for about 30 seconds until fragrant. Add the onions and tomatoes and sauté for 1–2 minutes. Pour in the heavy cream and bring to a gentle simmer.

Step 3: Add the Good Stuff

Stir in the Parmesan cheese and Italian seasoning, then fold in the spinach until wilted. Squeeze in fresh lemon juice for brightness. Let the sauce thicken slightly.

Step 4: Return the Salmon

Place the salmon fillets back into the skillet, spooning the creamy sauce over the top. Simmer for another 2–3 minutes to let the flavors meld.

Tender, flaky salmon in a garlic butter spinach and cherry tomato cream sauce – its ridiculous how delicious this dish is!

Ingredients

  • 3 salmon fillets
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 1 small sweet onion, chopped
  • 1/3 cup vegetable broth
  • 1 1/2 cups cherry tomatoes, halved
  • 1 1/2 cups heavy cream
  • salt and black pepper to taste
  • 3 cups fresh baby spinach leaves
  • 1/2 cup parmesan cheese
  • fresh parsley, garnish
  • fresh squeezed lemon juice, garnish

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, skin-side down first. Sear for 5 minutes on each side until browned. Once salmon filets are cooked, remove from the pan and set aside.
  2. In the same pan, melt the butter. Add in the garlic and saute until fragrant. Add the onion and saute until translucent. Add the cherry tomatoes and saute for 1-2 minutes just until they start to become tender. Finally, pour in the vegetable broth, and allow the sauce to reduce down slightly. 
  3. Reduce the heat to low, add the heavy cream, and bring to a simmer. Stir occasionally. Season the cream sauce with additional salt and pepper to your taste.
  4. Add in the baby spinach and cook just until it wilts. Add in the parmesan cheese. Allow the cream sauce to simmer for a further minute until cheese melts through. 
  5. Add the salmon filets back into the pan and cook for an additional 5 minutes. Garnish with the parsley, and spoon the sauce over each filet. Garnish with freshly squeezed lemon juice. Serve the creamy Tuscan salmon over steamed vegetables, rice, or pasta Enjoy!
