If you’re looking to spice up your side dish game, these Air Fryer Suya Potato Wedges are the answer. Crispy on the outside, fluffy on the inside, and coated in bold, nutty West African suya spice, they’re totally addictive. Think of them as fries with serious flavor—savory, smoky, and just the right amount of heat.
The best part? They’re made in the air fryer, so you get that perfect golden crispiness without deep frying. Whether you’re serving them as a snack, a side dish, or part of a cozy weeknight dinner, these wedges are always a hit.

What is Suya Spice?
Suya is a popular West African spice blend traditionally used on grilled meat. It features ground peanuts, ginger, paprika, cayenne, and a mix of savory spices. It’s smoky, nutty, spicy, and deeply aromatic. While it’s most commonly seen on beef skewers (like Nigerian suya), it’s also incredible on veggies, tofu, or—yes—crispy potatoes.
Ingredients
- 2–3 medium russet or Yukon gold potatoes
- 1 tablespoon vegetable oil
- 2 tablespoons suya spice blend (store-bought or homemade)
- Salt, to taste
- Fresh parsley or cilantro, for garnish (optional)
- Lime wedges, for serving
How to Make Suya Potato Wedges in the Air Fryer
1. Prep the Potatoes
Wash and scrub potatoes (no need to peel), then cut into thick wedges. Soak them in cold water for 30 minutes to help remove excess starch—this is key for extra crispiness. Drain and pat dry.
2. Season the Wedges
Toss the dried potato wedges with oil, suya spice, and a pinch of salt. Make sure each piece is well coated in the seasoning.
3. Air Fry to Crispy Perfection
Preheat your air fryer to 400°F. Arrange the wedges in a single layer (work in batches if needed) and cook for 15–20 minutes, flipping halfway, until golden brown and crisp.
4. Serve & Enjoy
Serve hot, sprinkled with fresh herbs and a squeeze of lime. They’re delicious on their own or paired with a cooling dip like perinaise or ketchup.

Why You’ll Love These
These wedges are the perfect balance of crispy, spicy, and savory. The suya seasoning gives them a unique twist that goes beyond basic fries. Plus, making them in the air fryer means less oil, faster cooking time, and easier cleanup—win, win, win.
Tips & Variations
- No air fryer? Bake in the oven at 425°F for 30–35 minutes, flipping halfway.
- Dial down the spice: Use less cayenne in your suya mix or add a little honey for balance.
- Want it extra crispy? Don’t skip the soaking step, and avoid overcrowding the air fryer basket.
- Make it a meal: Serve with Grilled Chicken Suya or Nigerian Coconut Chicken Stew.
