Some days just call for a simple, but yummy toast. Know what I mean?
Lately, I’ve been into simple recipes with maximum flavor and these spicy roasted cauliflower & mushroom toasts are just that. As the days are starting to get warmer, I’m all about spending less time in the kitchen and more time outside so I love making these toasts.
So why are these roasted cauliflower & mushroom toasts so delicious? Well besides both cauliflower and mushrooms already having an earthy/umami flavor; the spice profile in this recipe is ras el hanout! Ras el hanout also has an earthy flavor profile that’s woody and pungent but also has a hint of sweetness thanks to cinnamon and nutmeg. When you combine this with the cauliflower and mushroom it’s an explosion of flavor in your mouth. I honestly can’t stop making or eating these toasts.
This recipe is so easy! All you need to do is break up your cauliflower into pieces and slice your mushrooms. Drizzle olive oil over them and toss, then season with salt and pepper. Then you’re going to season them with the ras el hanout, massaging the spice into the veggies. I like to use a lot of this spice so I go in with about a tablespoon.
To roast the cauliflower and mushrooms I used de Buyer’s perforated aluminum baking sheet. This is the perfect baking sheet to use to battle against soggy, and soft baked goods! Both the mushrooms and cauliflower roasted perfectly on this pan; crisp but not too dried out.

After the cauliflower and mushrooms finish roasting assembly of these toasts is very easy. The ingredients for the toasts are as follows:
Ciabatta Toast
Hummus
Pickled Red Onions
Pickles
Parsley, chopped for garnish
olive oil for drizzling
Toast your ciabatta bread then spread the hummus on top. You can also toast your ciabatta slices on the de Buyer aluminum perforated baking sheet. Next top with the roasted mushrooms or cauliflower, followed by the pickled onions, then pickles, and finally garnish with the chopped parsley and a drizzle of olive oil. Spicy Roasted Cauliflower & Mushroom Toasts

1 large cauliflower head
2 cups sliced mushrooms
1 white onions sliced
4 tbsp Ras el Hanout
1 red onion
2 tbsp sugar
1 cup of red wine vinegar
salt and pepper to taste
Toasted ciabatta bread
Hummus
Pickles, diced for garnish
freshly chopped parsley for garnish
lemon juice for garnish
Directions
- Preheat your oven to 400°F.
- Break the cauliflower down into florets and add to a large bowl. Drizzle generously with olive oil, a tsp of salt and 2 tbsp of the ras el hanout. Mix well then place onto a baking sheet making sure the cauliflower is well spaced out. Combine the mushrooms and onions in a separate bowl and repeat the instructions for the cauliflower.
- Roast in the oven for 30 mins, turning occasionally until golden brown and caramelized on all sides.
- To assemble, spread the hummus over toasted ciabatta bread. Arrange the cauliflower and pickled red onions, and pickles over the top. Repeat with the mushrooms and onions except leave off the pickled red onions for the mushroom toast. Add some chopped parsley and a good drizzle of olive oil and freshly squeezed lemon juice. Enjoy!
