The Holiday’s are my FAVORITE time of the year because it always involves lots of food, and catching up with friends and family that I haven’t seen all year. Every year, I always try to throw a friendsgiving dinner for my friends who live in Los Angeles. I do this because it gives me a chance to celebrate with them before having to go back home to my family for Thanksgiving or Christmas. Sometimes it can be hard juggling everyone and all the events, am I right? This year I wanted to do something different then a dinner so I decided to a host a friendsgiving brunch. I made some of my favorite holiday breakfast recipes and gathered the girls together, and we had an amazing time!
To get ready for the brunch I headed to Sam’s Club. I have been shopping at Sam’s Club with my family since I’ve been a little girl, and I love how you can literally get everything you need all in one store. Their large pack sizes makes shopping for the Holidays even easier because you can stock up on the things you need so you’ll have enough for everyone. For my brunch I wanted to make a sausage, mushroom, and spinach quiche. This is something that my mom would make Christmas morning, and the flavors immediately make me think of the Holiday season. I picked up Jimmy Dean® Sausage to use in the recipe.
I also grabbed some Tyson® Cornish Hens because I love to serve them during the Holidays. Everyone gets their own hen, and I think it makes them feel special. Sam’s Club also had a lot of Holiday decorations, and I picked up a few things to make the house really feel like Christmas.

The Ultimate Friendsgiving Brunch with Sam's Club
Sausage, Mushroom, and Spinach Quiche
Ingredients
- 1/2 yellow onion, diced
- 4 ounces mushrooms, sliced
- 8 ounces Jimmy Dean® Sausage
- Olive oil
- 6 large eggs
- 1/2 cup half and half
- Salt and pepper, to taste
- 1 cup sharp cheddar cheese, shredded
- 1 cup spinach
Instructions
- Preheat your oven to 375 degrees F.
- In a large oven-safe skillet, heat 1 tablespoon olive oil over medium-high heat. Add onion and mushrooms and cook until soft. Remove and set aside.
- Add sausage to the pan and cook until no longer pink. Drain any excess grease. Add the sausage and onions back to the pan.
- In a large bowl, whisk together eggs, milk, salt and pepper. Stir in cheese and spinach.
- Pour the egg mixture over the sausage mixture in the pan. Mix to combine evenly.
- Bake for 40-50 minutes or until egg is no longer runny in the center.
