Happy 4th of July everyone! I hope everyone’s day has been filled with lots of time spent with family/friends, food, and fireworks. Today I decided to be a little adventurous and bake a cake. Yes, that’s correct. You heard right. I baked a cake! For those who know me, that is a pretty big deal because I suck at baking desserts. It doesn’t matter if it is something as simple as cookies or brownies; I manage to screw it up every time. Lol! That’s why my Strawberry America Cake is fool proof. It’ s super easy to make because it starts off with cake mix. But no worries, fresh strawberries fill the cake and icing so no one will ever be able to tell; unless of course you tell them.
Strawberry Cake has been one of my favorite desserts for years; so naturally it was a recipe that was high on my list of recipes to re- create. However there was no way I was going to make it from scratch. Using the cake mix really makes life easier and cuts down on the amount of time I spend in the kitchen especially on a day like today where I’d rather be eating and hanging out.
Strawberry America Cake Recipe
I love this recipe because you can dump all the ingredients into one bowl and mix it all up. It’s literally that easy.
I diced up fresh strawberries and put them in a ziploc bag with 1 teaspoon of sugar and then mashed them up. This is the secret to making the strawberry cake mix taste like it was made from scratch. I used a soy sauce bottle to moosh the strawberries.
Mix it all together and pour into a pan!
I iced my cake with vanilla icing and decorated with strawberries and blueberries in the shape of of an American Flag for the 4th of July.
Strawberry America Cake
Ingredients
- 1 package of strawberry cake mix
- 1 (16-ounce) container fresh strawberries
- 1 tsp of sugar
- 3 eggs
- 1/2 cup vegetable oil
- 1 cup of water
- 1 container of vanilla icing
Instructions
- Preheat the oven to 350 degrees. Coat the bottom of the pan with non stick cooking spray.
- Wash, cut the tops off, and dice the strawberries into medium sized pieces. Take 3/4 of the strawberries along with 1 teaspoon of sugar and add them to a ziploc bag. Once in the bag smash the strawberries until they have combined with the sugar and are a jam like consistency.
- Combine the cake mix, eggs, vegetable oil, and water in large bowl and mix until combined. Beat with a mixer on medium speed for 2 minutes, and pour the mixture into your pan.
- Bake for 32-40 minutes. Once the cake is done baking, let it cool in the pan for 10-15 minutes before removing it from the pan. Frost the cake with vanilla icing and decorate with the remaining strawberries.
