I love cleaning out my fridge during the summer because it is usually filled with some of my favorite seasonal vegetables. During the summer season I keep my fridge stocked with fresh vegetables like bell peppers and broccoli because of my frequent weekend trips to the farmer’s market (i’m addicted to outdoor farmer’s markets that are sourced with local ingredients). I love to make stir fry’s with pretty much any vegetable.
Stir Fry’s are so versatile; they’re amazing! You can pretty much use whatever ingredient you have on hand, and it’s guaranteed to come out as a delicious and flavorful meal. At this time, I had shrimp in my fridge so I decided to use it as my protein in the stir fry.
I like to add my shrimp to the saute pan first to give it a nice sear. That’s where you get all the flavor!
I do have to say that the best part of this dish is the ability to customize your protein and veggies. Any time I know that I need to clean out my fridge, a stir fry is usually my go to dish.
Simple Shrimp and Noodle Stir Fry
This yummy simple shrimp and noodle stir fry is flavorful and colorful, and will leave you wanting more!
Ingredients
- 3 tablespoons of vegetable oil
- 5 sweet mini- peppers, sliced into strips
- 1/2 cup chopped onions
- 1 cup of broccoli, chopped
- 1/2 cup of shredded carrots
- 2 tablespoons of minced garlic
- 1 teaspoon of minced fresh ginger
- 1 pound of shrimp, shelled and deveined
- 1 teaspoon of sesame oil
- 1 teaspoon oyster sauce
- 2 teaspoons of soy sauce
- 1 teaspoon of black pepper
- 1 teaspoon of cayenne pepper
- 1 teaspoon of garlic powder
- 1 package of spaghetti noodles
Instructions
- Cook the spaghetti noodles in a large pot of boiling, salted water until the noodles are al dente.
- Place a wok or large saute pan over medium-high heat. Add 2 tablespoons of vegetable oil and heat for 30 seconds. Add the garlic and ginger and cook for 1 minute, stirring consistently.
- Add the shrimp to the pan and cook until the shrimp are cooked through (turning pink on all sides), about 2-3 minutes. Remove from pan and set aside.
- Increase the temperature to high. Add 1 tablespoon of vegetable oil to the pan, and then add the bell peppers, onions, carrots and broccoli. Add the garlic powder, cayenne pepper, black pepper, and salt and continue to cook, stirring constantly for 3 to 4 minutes. The vegetables should be crisp but tender,
- Turn the heat down to medium-low and add the cooked pasta, shrimp, sesame oil, soy sauce, and oyster sauce and toss everything together. Once combined cook for an additional 1-2 minutes.
- Transfer the stir-fry to serving plates and serve immediately!
