HOW TO MAKE THE JERK SAUCE
This jerk sauce is one of my favorite types of spicy sauce! It’s got the heat that you need when you’re looking for spicy, but also an underlying note of sweetness that brings the sauce together as a whole. Making this jerk sauce IS SO EASY because you’re literally just throwing all the ingredients into a blender. That’s it!

When it comes to adding the scotch bonnet pepper; you can add as little or as many as you like. Jerk seasoning is known for the heat so I recommend at least 4 peppers. If you love the heat go ahead and add more, but do know that scotch bonnet is a HOT pepper. If you can’t find scotch bonnets, habaneros are an excellent substitution.
How to Make Saucy Jerk Chicken Wings
Step 1: Blend the Marinade
Add all marinade ingredients to a blender or food processor. Blend until smooth. Set aside 1–2 tablespoons of the marinade to make the glaze later.
Step 2: Marinate the Wings
Place wings in a bowl or zip-top bag and coat with the jerk marinade. Cover and marinate in the fridge for at least 1 hour, or overnight for deeper flavor.
Step 3: Bake or Air Fry
Preheat oven to 400°F or heat your air fryer to 375°F. Arrange wings on a lined baking sheet or in the air fryer basket. Bake/air fry for 25–30 minutes, flipping halfway, until golden and crispy.
Step 4: Make the Jerk Glaze
In a small saucepan, combine honey, soy sauce, and reserved jerk marinade. Simmer over low heat for 2–3 minutes until slightly thickened.
Step 5: Toss & Serve
Toss cooked wings in the warm glaze until coated and sticky. Garnish with sliced green onions or a sprinkle of chopped herbs, and serve immediately!

Saucy Jerk Chicken Wings
These saucy jerk chicken wings are my favorite way to make jerk chicken! Full of flavor and ridiculously easy to make; this is a recipe that I find myself coming back to time and time again.
Ingredients
- For the Jerk Sauce
- 4 organic scotch bonnet peppers (habanero peppers)
- 1 medium yellow onion chopped
- 6 cloves garlic
- 6 stalks of scallion
- 1/4 cup white vinegar
- 1/4 cup soy sauce
- 1 ½ teaspoons sea salt
- ½ tablespoon ground black pepper
- 1 tablespoon grated fresh ginger
- 2 tablespoons fresh pimento seeds
- 2 tablespoons brown sugar
- 1 teaspoon of freshly grated nutmeg
- 2 tablespoons olive oil
- 7 sprigs of fresh thyme
- lime juice, from 1 lime
- For the Jerk Chicken
- 1½ pounds chicken wings, washed and pat dry
- 1 small onion, sliced
- 1 bell pepper (any color), sliced
Instructions
For the Jerk Sauce
- Add all the ingredients to a blender and blend until completely incorporated
- Once completely blended, reserve 1/4 cup of marinade and set it aside.
In a large bowl or resealable bag, combine the chicken wings and the jerk sauce. Allow to marinate for at least 1 hour but preferably overnight. - Preheat oven to 400 degrees.
- Arrange the chicken on a large baking pan or grill. Add the sliced onions and bell peppers to the pan, and bake for 40 minutes flipping the chicken halfway through.
- After 40 minutes, broil the chicken for 5-7 minutes until crisp and slightly blackened.
- Remove the chicken from the pan and toss with the 1/4 jerk sauce reserved from earlier.
- Serve immediately!
