Hi everyone! After a brief blogging hiatus… I’m back!
I’ve missed you all! 🙂 Not being able to post for the last couple of weeks has been driving me nuts! If you guys don’t know I started my first semester of grad school last month, and I’m still working full time Monday through Friday; so getting a schedule down to juggle everything has been kind of hard for me. How do all these amazing bloggers do it?
Anyway enough about that…Fall is finally here! Well, it’s still hot as the dickens here in LA, but I’m determined to celebrate fall the best way that I can. It seems like everyone’s favorite fall dishes contain the infamous pumpkin, and you know what… I’m all here for it! I love pumpkin, and one of my favorite recipes to make during the fall and especially for Halloween are my Pumpkin Spiced Chocolate Chip Cookies.I got this recipe from a college friend’s mom. She used to send us the most beautiful fall themed care packages, and the cookies were always inside. It was always one of my favorite things to look forward to; so I had the idea to extend that friendliness to my neighbors and host a small fall party outside in our alley. Yes… you read right. I said alley! Good ole apartment living, lol. I should correct myself though. It really wasn’t a party since all I did was move my butcher block outside, decorate it, and serve the cookies on it, but it was most appreciated by my neighbors and was a great way from keeping me from eating all those cookies! 😛
These cookies are so addicting! The pumpkin spice flavor goes so well with the chocolate chips, and when the cookies finish baking you end up with a soft cake like cookie. These are perfect for a night of carving pumpkins with the kids (I still do this with my friends) or a night of scary movie watching with the boyfriend. Pumpkin Spiced Chocolate Chip Cookies
Pumpkin Spiced Chocolate Chip Cookies are the perfect blend of pumpkin pie and chocolate chip cookies. Flavorful, cake-like, soft cookies that will make you enjoy fall and Halloween!
Ingredients
- 1 cup of pumpkin puree
- 1 egg
- 1/4 cup of brown sugar
- 1/2 cup of granulated sugar
- 1/2 cup of unsalted butter, melted
- 2 cups of all purpose flour
- 1/4 tsp of baking soda
- 1 tsp of milk
- 1/4 tsp of baking powder
- 1-1/2 cup of ground cinnamon
- 1/4 tsp of all spice
- 1 tsp of vanilla extract
- 1/2 cup of semi-sweet chocolate chip cookies
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a medium bowl, combine the granulated sugar, brown sugar, 1 egg, vanilla extract, melted butter, and the pumpkin puree with a stand mixer or by hand.
- In a separate bowl, combine the flour, baking powder, cinnamon, and all spice. Mix the baking soda and 1 tsp of milk together and add it to the flour mixture. Mix all the dry ingredients together until combined.
- Add the dry ingredients to the pumpkin puree mixture, and mix together until all combined. You can do this by hand or with a mixer on medium speed. Stir in the chocolate chips and mix until well combined.
- Take 1 tbsp of dough and roll into a ball. Place on the baking sheet. Repeat until all the dough has been rolled into balls. Bake the cookies for 10-12 minutes at 350 degrees. Allow the cookies to cool for 10 minutes before transferring to a wire rack.
