Quick, easy, and flavorful fried rice that’s tastier and healthier than takeout.
We all know by now that I’m a sucker for rice; especially fried rice! What I love about fried rice so much is that it’s quick and easy to throw together, and there are so many different variations of it that you can make. One of my favorites happens to be my recipe for pineapple fried rice. I think it has something to do with the “sweet/salty” and “sweet/heat” phenomenon that happens every time I eat it. The sweet caramelized pineapples marry so well with the spices that it just creates a party in my mouth! Seriously…
My second favorite part of this recipe is that it can be made with the staple ingredients in your kitchen. It’s safe to say that if you cook fairly regularly that you probably have some rice, bell peppers, onions, and frozen vegetables stowed away in your kitchen. And besides the addition of pineapple; this is all you need to make this recipe. I was serious when I said that this was quick and easy. The hardest part is the prep and honestly cutting veggies isn’t even that hard. After that you are just throwing everything in a skillet with some spices, and bam! dinner is served.
If you’re feeling fancy you can serve the rice in a pineapple “bowl”. To do this all you need to do is cut the pineapple in half and scoop out the insides. I’ll be uploading a tutorial on how to do this to my YouTube channel later on in the week. I always say beautiful plating makes you want to eat the food even more so why not take that extra step to make it look really good?
And that’s it! You can have dinner ready in no time. Some things that I do to quicken the process are that I use frozen vegetables (peas, carrots, green beans, and broccoli) that I’ll steam in the microwave before sauteing, and I also use day old rice. Using day old rice is usually a rule you want to stick to whenever you make fried rice because if you use rice that has just been boiled chances are it will come out a little soft and mushy. If you have left over rice from takeout it’s perfect to use in this recipe. I usually serve the rice with chicken, and my Glazed Jerk Chicken (coming soon) goes perfectly with it. Pineapple Fried Rice
Quick and easy pineapple fried rice that is literally a party in your mouth thanks to the combination of sweet caramelized pineapples and spices.
Ingredients
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 medium sized red onion, chopped
- 1 12 oz bag of frozen mixed vegetables, steamed
- 1 12 oz bag of frozen broccoli, steamed
- 2 tbsp vegetable oil
- 2 tbsp curry powder
- 1 tsp seasoning salt
- 1 tsp Accent
- 1 tsp garlic powder
- salt and pepper to taste
- 1 tbsp soy sauce
- 1 tbsp Gochujhang (Korean Chili Paste)
- 2 cups pineapple, chopped
- 3 cups day old Jasmine Rice
Instructions
- Heat vegetable oil in a large skillet or wok over medium high heat.
- Add the onions and bell peppers to the skillet, and cook, stirring often, until onions have become translucent, about 3-4 minutes.
- Stir in the steamed vegetables (carrots, broccoli, peas, and green beans) and cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
- Season the vegetables with the curry powder, seasoning salt, and accent.
- Add salt and pepper to taste, but salt cautiously because of the addition of soy sauce.
- Stir in rice and mix everything together.
- Add the gochujang, soy sauce, and pineapple. Cook, stirring constantly, until heated through, about 2 minutes.
- Serve immediately.

Love the fact that you’ve served it in the pineapple, a very cool idea! Great idea for summer – but we are heading into winter on the other side of the world so I made a pumpkin serving bowl for my pumpkin soup recently. I will have to try this rice with a pineapple serving dish in our summer.
