Eating breakfast every morning has always been some sort of a struggle for me. I don’t know why, but most mornings I end up skipping breakfast, rushing straight to work, famished by the time lunch rolls around. And if I do manage to grab something for breakfast; it usually isn’t something healthy, like a McDonald’s sausage biscuit (so good, but bad lol).
This year I’m keeping to my resolution of healthy eating so for me that means eating breakfast everyday, and not just any kind of breakfast, but one that’s healthy and will give me energy throughout the day. For that I turned to oatmeal. Oatmeal and I have always had a love hate relationship that dates back to childhood. As a kid I hated it because it was what we ate every morning, and I tired of it quickly. Now that I’m older I actually enjoy eating oatmeal because I’ve actually taken the time to come up with different variations of it, like these Oatmeal Chia Breakfast Bowls.
These oatmeal chia breakfast bowls are packed with all sorts of good stuff to keep me full and energized throughout the day. I decided to add chia seeds to the oatmeal because I love the texture it adds to the oatmeal. When chia seeds are soaked in liquids they plump up and get a jelly-like texture that goes great with oatmeal. They’re also a great source of fiber and omega 3 fatty acids.
Putting these oatmeal chia breakfast bowls together is super simple! I just take some old fashioned oats and chia seeds and throw it in a small pot with some almond milk. While it cooks I add honey, brown sugar, vanilla extract, and a pinch of salt to balance out the flavors. It cooks in about 10 minutes, and then its on to my favorite part, the toppings!
Go wild with the toppings. I like to add fruit, like berries, and granola. I also added these Zola Dark Chocolate Covered Organic Acai Blueberry that I found at Grocery Outlet not too long ago. They add a nice sweetness and let me get my chocolate cravings in without feeling guilty! Check out the recipe below!

Oatmeal Chia Breakfast Bowls, a quick and easy healthy breakfast loaded with tons of nutrients that will keep you energized throughout the day.
Ingredients
- 1 1/2 cups old fashioned oats
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract
- pinch of sea salt
- 1 teaspoon of light brown sugar
- 2 tablespoons honey
- 3 1/2 cups almond milk, unsweetened
- Toppings: granola, blueberries, raspberries, blackberries, Zola Dark Chocolate Covered Organic Acai Blueberry
Instructions
- Place all ingredients in a medium-size pot and bring to a boil at medium/high heat.
- Reduce heat to medium and let simmer for about 10 minutes, stirring often until oatmeal has thickened and most of the liquid has absorbed.
- Top with granola, blueberries, raspeberries, blackberries, Zola Dark Chocolate Covered Organic Acai Blueberry
