A new sandwich truck, the Mad Pambazos food truck has been hitting the LA streets for the past month, and I finally got to check it out!
Finding these guys wasn’t hard at all, thanks to their dope website that’s updated weekly with their schedule. During the day (usual lunch hours) you can find them parked outside of Blue Bottle Coffee Shop, and of course that’s where I met them.
Something that I really love about food trucks is that it gives you an opportunity to connect with the chef and owners who are behind the food. I don’t always get a chance to do that dining in at a restaurant; so whenever I’m at a new truck I try to seize that moment. The few moments I got to spend talking with their manager, Joseph Drewer was really nice. I got their back story, and I really identified with it as my story is kind of the same. They are 3 guys from the East Coast who decided to move out to the West Coast and launch the Mad Pambazos truck. Two of the guys actually used to be chefs in SoHo at Rouge Et Blanc; so there’s some real talent on this truck!
On to the food…
First let me say, I had never heard of a pambazo and I had no idea what it was. I’ll also be honest and admit that I didn’t bother on doing any research about it because because truthfully; I wanted to see if the guys on the truck knew their stuff, and if I was really going to be getting some good food. And boy, did I?!
So, what is a pambazo? It’s a sandwich with origins from Mexico City that’s dipped in salsa and then pressed until it’s hot and crispy. Sounds lovely right?
Silver Tongue’s ChickenThis sandwich was DELICIOUS! It’s a chipotle chicken and chipotle mayo, and all the Pambazos are served with a cabbage salad, pickled jalapeño, crema, and cotija cheese. When I bit into the sandwich there was just a huge burst of flavor! There was also a really nice smokiness thanks to the chipotles.
The People Eater-VeggieFor the veggie lovers meet the people eater. Smoked potato, red chill butternut squash, salsa verde, and chihuaha cheese. Again this had so much smoky flavor, and I didn’t even miss the fact that there wasn’t meat on this sandwich.
Fresh Squeezed Juice Spritzers
To wash it all down they have these amazingly delicious fruit spritzers. I tried the Passion Fruit and Strawberry Lemonade. The Passion Fruit was my favorite because it was less sweet and almost had a sour taste to it. (Sour in a good way 🙂 These were really refreshing.
Mango Guac TosatadaBright, bold, and sweet flavors. This was so yummy!
Furiosa TostadaSO MUCH FLAVOR! Shrimp, Smoked macadamia nuts, piña, and lime. The shrimp was so fresh. This tasted just like a ceviche, and I loved it!
I’ll let you guys in on another rather obvious secret. Did you notice that the menu items were all themed around Mad Max? I didn’t at first (LOL), but as soon as I did the whole experience got way cooler for me. You guys have to experience this yourself so check out their website to see where they’ll be landing next!

July 7, 2016I need this truck in my life! I think it’s pretty cool that one of the managers at the car dealership I work at has a different food truck every Friday. The Wandering Moose serves the best turkey burger I’ve ever had, hah.

July 13, 2016The fact that they dip the sandwich in salsa and then press it sounds so delicious!! And the food is really pretty especially coming from a food truck. Ok gotta find em now so I can grub like you! And is that bern holding the burger???
