I have been in the baking mood lately, and with the holidays coming up the search for a new holiday cookie recipe has been something that I’ve been consuming my weekends with. I stumbled on these hot chocolate cookies from Averie Cooks, and it was as if the cookie gods had answered my prayers!I do have to admit that I’m not much of a baker. It’s been something that I’ve been working on trying to get better at, but at the same time using shortcuts and Betty Crocker’s cookie mix makes this cookie recipe fool proof. Yep, that’s right! Even I can’t mess this recipe up!
To get the max amount of chocolate for this recipe, I decided to go with Betty Crocker’s Double Chocolate Chunk cookie mix. I picked the cookie mix up at Walmart along with some marshmallows and Ghirardelli’s intense dark chocolate. To make the cookies all you have to do is follow the instructions on the back of the cookie mix. Bake for 5-6 minutes at 375 degrees. Remove from the oven, then place a piece of dark chocolate directly in the center. Lightly press the chocolate into the cookie and then place half of a marshmallow on top of the cookie. Return to the oven and bake for an additional 2 minutes, until the chocolate melts and the marshmallows soften.
I am in love with how easy it is to make these hot chocolate cookies, and because of the simplicity they make the perfect holiday cookies. I spend a lot of time cooking during the holidays; so it’s nice to have a recipe that is simple enough to make so that you can spend more time with the family. Hot Chocolate Cookies
Ingredients
- 1 package of Betty Crocker's Double Chocolate Chunk Cookie Mix
- 1 tsp of vanilla extract
- 8 oz of dark chocolate cut into little squares
- 12 large marshmellows cut in half
Instructions
- Preheat oven to 375 degrees.
- Follow the instructions on the Double Chocolate Chunk Cookie Mix to make the cookie batter.
- Add in 1 tsp of vanilla extract.
- Bake the cookies for 5-6 minutes.
- Remove from the oven, then place a piece of dark chocolate directly in the center.
- Lightly press the chocolate into the cookie and then place half of a marshmallow on top of the cookie.
- Return to the oven and bake for an additional 2 minutes, until the chocolate melts and the marshmallows soften.
- Allow to cool 5 minutes before serving!
