A fun twist on classic pound cake using Honeycomb® cereal.
One of my favorite cereals while growing up was Honeycomb® cereal. For me it had just the right amount of mild sweetness. I was never a fan of any of the sugary cereals, and the honey flavor in the Honeycomb® cereal made it so addicting to the point that it didn’t matter if I didn’t have any milk; I would snack on the cereal on its own, straight out of the box. As an adult now I don’t eat cereal too often, but when Post Consumer Brands and Honeycomb® cereal reached out to ask if I’d develop a recipe for them to celebrate the Holidays and the new movie SING© an instant wave of nostalgia hit me, and I knew my answer was going to be yes.
During the holiday season, pound cake is a must in my household. Once the majority of our Christmas shopping has been completed, the weekends leading up to Christmas are spent lounging around in the living room watching Holiday movies and snacking on slices of pound cake with a hot cup of tea. Adding the Honeycomb® cereal to the pound cake was the perfect way for me to combine the two! I picked up the cereal at Kroger (Ralph’s), and on my way home I started thinking about all the different ways I could use it in the pound cake recipe. I settled on grinding up the cereal, and using it as flour for the batter. It came out amazing because the honeycomb really brought out the honey flavor, the real star of this cake.

In addition to the honey, I also added lemon juice and lemon zest to brighten up the flavors of the cake. I love the way the cake came out so much, that the Honeycomb cereal is definitely becoming a staple in my pantry. Check out the recipe below!

Honeycomb Cereal Pound Cake with Honey Lemon Glaze
A fun twist on classic pound cake using Honeycomb® cereal.
Ingredients
For the Honeycomb Pound Cake
- 1/2 pound (2 sticks) unsalted butter, at cool room temperature
- 1 1/4 cups sugar
- 4 extra-large eggs, at room temperature
- 2 tablespoons honey
- 2 teaspoons pure vanilla extract
- 1 teaspoon grated lemon zest
- 1 1/2 cups sifted cake flour
- 1/2 cup finely ground Honeycomb Cereal, about 3 cups whole cereal
- 1 teaspoon kosher salt
- 1/2 teaspoon baking powder
For the Honey Lemon Glaze
- 2 tablespoons butter or margarine, melted
- 3/4th cup powdered sugar
- 2 tablespoons of honey
- 2 tablespoon lemon juice
- 1/2 teaspoon grated lemon peel
Instructions
- Preheat the oven to 350 degrees.
- Grease the bottom of a loaf pan, and set aside.
- In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar for 3 to 4 minutes, until light.
- Put the eggs, honey, vanilla, and lemon zest in a separate bowl but do not combine.
- With the mixer on medium-low speed, add the egg mixture, one egg at a time allowing each egg to become incorporated before adding the next egg.
- Sift together the flour, ground honeycomb powder, salt, and baking powder.
- With the mixer on low speed, add it slowly to the batter until just combined.
- Finish mixing the batter with a rubber spatula and pour it into the prepared pan smoothing the top. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
- Cool for 15 minutes, turn out onto a baking rack, and cool completely.
