The boyfriend’s birthday was this weekend, and I wanted to help him celebrate with his favorite alcohol… GIN!
Typically I am not fond of alcoholic beverages. If I’m going to drink I prefer not to waste time with all the added fillers (juice, soda, etc..) Cocktails usually make me full very fast, and I’m done having one by the first glass.
However, if you give me a gin and tonic then I’ll be your best friend 🙂 Lol! But seriously, I think this is why my boyfriend and I get a long so well. Both of our signature drinks just happen to be a gin and tonic. Of course it would have been boring to serve him up the normal gin and tonic, so I took a look around in the kitchen to see what I had available and viola!, the Ginger Mint Lemon Gin Cocktail was born. The base of this cocktail recipe is actually a ginger syrup. Believe it or not, this is something that I make on a daily basis because ginger is great for dealing with inflammation of the joints. I of course don’t add the booze and I drink it hot, but one morning I did have that that ah ha moment that the syrup would be great in a cocktail!
For the syrup all you need is ginger, lemons, water, and sugar. Put it all in one pot and boil for 15 minutes! I usually only make this recipe for one and don’t normally include sugar, but for the purpose of this cocktail sugar was absolutely needed!
Check out the recipe below! I would love to know what your favorite/signature cocktails are!

November 7, 2015My girlfriend asked what I could make with Mint and Lemons – found your recipe and tried it. But I’ve made a couple of changes. I used half cup of granulated sugar and half a cup of sugar in the raw instead of the cup of sugar. It added little hint of molasses. I also used lime in addition to the lemon. Finally added a splash of club soda for some fizz.. It’s a nice combo – thanks for adding this.
