Today I am sharing one of my favorite dishes to eat and cook. That’s right… my Easy Baked Mac n Cheese!

While this recipe is super easy to make; it is also still very flavorful and filled with that cheesy goodness that we all know and love. You can use whatever cheeses you like and even add bacon (make it sinfully good)! Last week I served this mac and cheese with my Balsamic Glazed Chicken Breasts and the combination of the two was so delicious!

Easy Baked Mac n Cheese

Yield: 6 to 8
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

This Easy Baked Mac n Cheese is a very simple and flavorful version of the classic baked macaroni and cheese.

Ingredients

  • 1/2 pound of elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups of whole milk
  • 1 bay leaf
  • 1/2 of an onion, finely diced
  • 1 tsp of black pepper
  • 1 tsp of salt
  • 1 tsp of garlic powder
  • 1 tsp of ground red pepper
  • 1 egg
  • 8 ounces sharp cheddar, shredded
  • 4 ounces mild cheddar, shredded

Instructions

  1. Preheat oven to 375 degrees.
  2. Cook the macaroni noodles in a large pot of boiling, salted water until the noodles are al dente.
  3. In a separate pot, melt the butter over medium-high heat. Whisk in the flour, and continue to whisk for 5 minutes making sure that the butter and flour mixture does not become lumpy and does not burn. Stir in the milk, onion, salt, pepper, garlic powder, ground pepper and bay leaf. Simmer for 15 minutes.
  4. Lower the heat, remove the bay leaf, and temper in the egg**. Stir in 3/4 of the cheese. Add the macaroni noodles to the mixture and combine. Pour into a casserole dish and top with the remaining cheese.
  5. Bake for 40 minutes. Remove from the oven and let rest for 10 minutes before serving

Notes

To temper the egg. Crack an egg in a small bowl and gently whisk. Slowly pour the egg into the milk mixture stirring consistently. Be careful not to add the egg to the milk too quickly, you do not want to end up with scrambled eggs.
