I love this shrimp curry recipe because it comes together so quickly with minimal effort! This curry is packed full of aromatic spices and delicious plump, juicy shrimp, making it the perfect meal. Serve it on a bed of white rice, and you’re sure to have your family licking their plates! 😂
INGREDIENTS FOR THE COCONUT SHRIMP CURRY
olive oil
onions
bell peppers
garlic
ginger
curry powder
turmeric
cayenne pepper
cumin
diced tomatoes
coconut milk
lime juice
shrimp, shells removed & deveined (you can use whatever size shrimp you like)
THE PERFECT CURRY
I love to make my curry from scratch when I can. While there are a lot of great store-bought curries out there; there is just something about toasting up your own spices and making the curry from scratch. The perfect curry for me has a combination of curry powder, turmeric powder, and cumin. This mixture is very aromatic and gives maximum flavor!
If you don’t feel like making the curry from scratch; you can grab a jar of curry sauce, which will work great as a base. You’ll still make the coconut shrimp curry the same pouring in the sauce instead of the actual spices. It’s up to you, but I’d definitely try making the curry from scratch first. 😃

HOW TO SERVE THE COCONUT SHRIMP CURRY
My favorite thing to serve with this shrimp curry is white rice! I think jasmine rice goes best because it has a nice aromatic smell and taste that accompanies curry wonderfully. You can also use basmati rice or just plain ole white rice. Some naan bread or roasted potatoes would also be great to serve with this curry.
Curry is also amazing as left overs so be sure to put away any leftovers in an air tight container and store in the fridge for up to a week. Check out the recipe below!
Coconut Shrimp Curry
This Coconut Shrimp Curry packs tons of flavor and is super easy to make! Juicy, delicious shrimp cooked in a creamy coconut curry that's perfect as a quick and easy meal!
Ingredients
- 1 pound extra-large shrimp peeled and deveined
- 1 teaspoon salt
- 1 teaspoon black pepper freshly ground
- 1 tablespoon coconut oil or olive oil
- 1 medium onion chopped
- 1 bell pepper, thinly sliced
- 3 cloves garlic minced
- 1 tablespoon fresh ginger minced
- ½ teaspoon black pepper freshly ground
- salt or to taste
- 1 teaspoon turmeric
- 2 teaspoons ground coriander
- 1 tsp cumin powder
- 2 teaspoon curry powder
- 1 tsp cayenne powder
- 1 14.5 oz can diced tomatoes
- 1 can of coconut milk
- 1/4 cup lime juice
- cilantro for garnish
- cooked rice for serving
Instructions
- Season the shrimp with salt and pepper and set aside.
- Heat the oil in a medium-sized skillet, add the onion and bell peppers and cook for 2 to 3 minutes. Stir in the garlic, ginger, curry, coriander, turmeric, cayenne, and cumin. Cook for 1-2 minutes.
- Add the can of diced tomatoes with the juices and the coconut milk, stir together and bring to a boil. Reduce the heat to medium-low and let it simmer for about 5-10 minutes, stirring occasionally. Add the shrimp along with the lime juice and cook for another 2 minutes, until the shrimp is pink and cooked through.
- Serve over hot rice and garnish with cilantro.
