I’m sharing a secret with you guys!
The secret? My beloved and all time favorite Cilantro Cream Cheese Chicken Quesadillas recipe.
As painful as it is to share this recipe (Lol), a true foodie would never keep a recipe that changes the game all to themselves. And this my friends, is a true game changer!
I’ve always loved Mexican food. I think I can attribute that love to my dad who whenever we went out to eat as a family was always suggesting a Mexican restaurant. We didn’t make eating out a habit; so naturally I spent a lot of time in the kitchen trying to re-create and come up with my own recipes. I am so thankful that my mom allowed me to have free range in the kitchen whenever I got the urge to cook something; it really shaped how I cook today now that I’m an adult.
Anyway, I wish I could remember where I got the original idea for this recipe, but I can’t. 🙁 I do remember that in the 9th grade I was taking Spanish, and we had to cook a dish for International Day; so I googled a bunch of recipes until I decide on this one. The first time I made this it was a hit with my family, and then when I took it to school for International Day everyone could not stop eating and talking about them. Yes, they were and still are that good! I will even go as far as to say that they are addicting!
Over the years I’m sure my method of cooking these has changed, but for the most part the ingredients have stayed the same. The original recipe calls for heavy whipping cream when making the cilantro cream cheese sauce, but I replaced that with water. With the addition of cream cheese this recipe is already pretty indulgent so I nixed the whipping cream in order to cut the fat and maintain my girlish figure, haha.
The cilantro cream cheese sauce really is what makes these quesadillas so good. You’re taking a boring old quesadilla and giving it a burst of flavor and creaminess. It really brightens up the whole dish!
I cannot wait for you guys to try this! This recipe has been tried and tested by many (recently at a housewarming party) and the outcome remains the same; people love them! Be careful though, I promise there is no way you’re going to able to eat just one. Enjoy!

I’m not a huge cilantro fan, but I think the cream cheese would totally balance out the flavor. Will have to try these for my cilantro-loving Hubby! Thanks for sharing!
