If you’ve ever had chargrilled oysters at a restaurant in New Orleans—or anywhere along the Gulf—you know exactly why they’re unforgettable. Smoky, buttery, garlicky, and just the right amount of indulgent, these oysters are one of those dishes that feel like a celebration.
The good news? You can make this restaurant-worthy recipe right at home—and it’s a lot easier than you might think.
Whether you’re throwing a backyard summer dinner or just want to treat yourself to something special, these chargrilled oysters deliver major flavor with minimal fuss. And don’t worry if you don’t have a grill—your oven broiler will do the trick too.

Chargrilled Oysters Ingredients
2 cloves garlic, grated
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1/4 cup parmesan cheese, grated
cajun seasoning and cayenne to taste
1 tablespoon parsley, chopped
12 oysters on the half shell
2 tablespoons parsley, chopped
How I Make My Chargrilled Oysters
I start with a garlic herb butter loaded with parmesan, parsley, a dash of lemon juice, and a hit of Creole seasoning. Once your grill is nice and hot, place the oysters directly on the grates. Spoon a generous amount of that flavorful butter into each shell and let them cook until the edges curl slightly and the butter is bubbling and golden.
A final sprinkle of parmesan and fresh herbs? Yes, please.
Btw, if you find yourself in New Orleans, head to Morrow’s for some of the best chargrilled oysters!

One of the best things about chargrilled oysters is how customizable they are. You can play with the flavor of the butter—try adding a splash of hot sauce for heat, swapping in smoked paprika for the cayenne, or even mixing in some finely chopped bacon for extra richness. If you’re hosting, set up an oyster station and let guests build their own before tossing them on the grill. It’s interactive, fun, and feels like a mini oyster bar right in your backyard.
I’ll be honest—this is one of those dishes that looks impressive but comes together with ease. And that’s the magic of great food: simple ingredients elevated by technique and a little love. So the next time you’re craving something bold and briny, skip the reservation and fire up the grill. These chargrilled oysters bring the flavor, the flair, and all the summer vibes straight to your table.

Chargrilled Oysters
Smoky, buttery, garlicky, and just the right amount of indulgent, these oysters are one of those dishes that feel like a celebration.
Ingredients
- 2 cloves garlic, grated
- 2 tablespoons lemon juice
- 1 teaspoon Worcestershire sauce
- 1/4 cup parmesan cheese, grated
- cajun seasoning and cayenne to taste
- 1 tablespoon parsley, chopped
- 12 oysters on the half shell
- 2 tablespoons parsley, chopped
Instructions
- Mix the butter, garlic, lemon juice, Worcestershire sauce, cheese, cajun seasoning, cayenne, and parsley and set aside.
- Place the oysters on a preheated 350 degrees F grill, let cook until the juice starts to bubble. Spoon in 1 tablespoon of the butter mixture onto each oyster, sprinkle on the cheese, and cook until the cheese is golden brown.
- Sprinkle on the parsley and serve immediately with extra butter and lemon wedges.
Notes
If you don't have a grill, you can broil the oysters in your oven. Place the oysters on a baking sheet, spoon in a tablespoon of the butter mixture into each oyster, top with the cheese, and bake in a preheated 400F oven until the juices start to bubble, about 5 minutes. Turn the oven up to broil and broil until the cheese is golden brown, about 2 minutes. You can add a few dashes of liquid smoke if you want to give it that smoky, chargrilled taste.
