These Roasted Tomato & Ricotta Crostini are the perfect little snack. Char-grilled french bread topped with herb ricotta and slow-roasted baby tomatoes make for an absolutely delicious bite.

I love making these crostini because they are full of flavor and super easy to make. Whenever I’m craving a savory yet healthy snack these often come to mind. It also doubles up as a great recipe because it can be used for entertaining!

For today’s post I teamed up with Real California Milk and bought some of my favorite dairy products with their seal on it. I spotted the Real California Milk seal on the ricotta and butter and immediately wanted to make these roasted tomato & ricotta crostini. You guys may remember that I’ve teamed up with them in the past; on my Creole Butter Chicken Wings and was definitely excited to be working with them again.

Dairy is a healthy source of protein, and California milk and dairy products are a healthy, tasty way to get essential vitamins and minerals. I love supporting local and family owned businesses so whenever I’m shopping for dairy products; I always try to spot the seal on them.

 

 

I was inspired to make a simple and healthy dairy snack recipe using Real California Milk and these roasted tomato and ricotta crostini are a great snack. The dairy I used in this recipe are the ricotta and butter. For the ricotta I wanted to give it some flavor so I added some Italian seasoning and basil to it. I also melted the butter and brushed it on the french bread before toasting them.

I drizzled the tomatoes with olive oil, vinegar, and salt & pepper before roasting them in the oven. This is the best part in my opinion. Once you’ve got all your ingredients assembling these crostini are super easy, and you’ve got the perfect snack. Check out the recipe video below.

Roasted Tomato & Ricotta Crostini

Yield: 4-6
Prep Time: 10 minutes
Cook Time: 1 minute
Total Time: 11 minutes

Ingredients

  • 10 ounces cherry tomatoes
  • 2 tablespoons extra virgin olive oil plus a little extra for drizzling
  • 1 garlic clove crushed
  • 1 tsp balsamic vinegar
  • 1/2 teaspoon Italian seasoning
  • 3/4 cup ricotta cheese
  • 1/2 teaspoon basil
  • salt & pepper, to taste
  • fresh crusty bread; I used french bread
  • fresh basil to serve

Instructions

  1. Pre-heat the oven to 300F.
  2. Line a baking tray with baking paper.
  3. Combine the tomatoes, oil, garlic & in a bowl and toss to combine, then pour out onto the baking tray and bake for 1 hour.
  4. While the tomatoes are baking, mix the Italian seasoning & basil into the ricotta. After the tomatoes are done, set them aside to cool a little while you char-grill the bread either on a grill or in the oven.
  5. Spread the toasts with ricotta, spoon over the tomatoes and juice. Garnish each with a few of the basil leaves.
  6. Season with salt and pepper and drizzle olive oil if desired.
